IN THIS
EPISODE.

How does a Wall Street trader end up cooking for Anthony Bourdain? I sat down with chef Seth Levine, a former Goldman Sachs trader who went on Hell's Kitchen before opening restaurants in New York, the Hamptons and London.

Seth tells how he fed Bourdain, Eric Ripert and Daniel Boulud on a sold-out Labor Day night, made $70,000 in 36 hours selling newspapers on eBay after Obama's election, and turned a loan from his dad into a SoHo frozen yoghurt brand he sold for a little under $1 million. We also get into what Gordon Ramsay is like off camera, why New York health rules made him cut a hole in his floor, how labour lawsuits squeeze restaurant owners, and why he never chased a Michelin star.

Then he cooks at the table, putting caviar on seared wagyu and truffle chips, and explains why China now leads the caviar world.
